No other meal has such a strange job description. Breakfast is supposed to restart the human machine, comfort the soul, stabilize the blood sugar, please the children, support the economy, justify the existence of toast, and somehow happen while everyone is late. It is the meal of hope and crumbs. It is the meal where civilization says, “Let us begin again,” and then burns the first pancake as a sacrifice to the gods of timing.

The science of breakfast begins in the body. After a night without food, the body does not wake up as much as it files a complaint. Blood sugar, hormones, digestion, hydration, appetite, and brain function all begin their morning committee meeting. Some people wake up starving. Some people wake up convinced food is an insult. Some people require coffee before speech is possible. This book respects all of them, except maybe the people who talk cheerfully before dawn. They are probably innocent, but they should still be monitored.
